Add shortcode_globs setting to documentation

As the title says. I was also thinking of maybe adding .gif as default, but didn't do it because 1) of compatibility reasons and 2) the emoji-repo seems to use only .png anyhow and this is the preferred way of adding emojis now.

I things aren't 100% as they should be, plz let me know, it's the first time I contribute to documentation.
